For these pork hocks, I trimmed them, seasoned them, got my pellet smoker running at around 275F/135c using Pecan pellets and then put my pork hocks in. I let them go for around 2.5 hours until they had developed a nice colour and the rub had set on the meat nicely, the internal temperature at this stage was around 185F/85c. Can you have crackling and pulled pork together? Absolutely! Pork hocks are a ridiculously cheap cut. I've slapped a couple of them on to my favourite @kamadojoeuk accessory, the Joetisserie and spun them over fire with a bit of cherry smoke until they hit 93c internal temperature. I started at 240c then slowly dropped this throughout the cook. This ensures the fat starts to render from the start which helps give us that beautiful crispy skin.
