And I used epoxy to fix up some old wood (wood was in overall good cond, and and oddball size), it had rotted a little in some of the ends/corners, but it had fully dried out.

If you're working weekends, it might take 4 weekends working hard. Since it's so time consuming, there's no reason to skim on materials. My pontoon is a 1985 model, and it still has the original marine plywood on it.

Marine grade plywood is NOT more rot resistant than pressure treated plywood, it is only a better grade of materials, in that it has less defects, gaps, holes, spaces, etc within the ply's.
